For bites:
2 tsp ground coffee
1.5 tsp hot water
1.25 cups rolled oats
1/4 cup medjool dates, soaked in boiling water to soften then drain water
1 tbsp honey
1 tbsp granulated stevia
1 tsp vanilla extract
2 tbsp coconut oil, melted
For topping:
2 tbsp dark chocolate chips
1 tsp coconut oil, melted

Mix the coffee and water together and set aside.
Add all remaining bites ingredients plus coffee mixture together and blend in a food processor until well combined.
Take a tablespoon out at a time, roll into balls and place on a plate or in a container and pop in the fridge to set.
Once the bites have set, make the chocolate sauce by placing dark chocolate chips and coconut oil in a microwave safe bowl and microwave until the chocolate is melted but be careful not to overcook (cook in 30 second intervals).
Dip bites halfway into chocolate dipping sauce and place on tray and set in fridge to set.
