I am all for low calorie delicious treats because that means you can have a couple a day! I’ve decided to share our top 3 FAV snacks that are not only easy to make, but are DELICIOUS! You won’t even know they are low in calories. These are perfect as a snack at work, whether you're working in the office, in a store, or working at home being a stay at home Mum. Because we all know how hard it can be snacking healthily in all those scenarios.
BIRTHDAY CAKE CORNFLAKES BARS
Ingredients:
2.5 cups cornflakes
2 tbsp honey
2 tbsp coconut oil
1/2 scoop Slim Mama Shake (choc or vanilla)
3 tbsp peanut butter
1-2 tsp sprinkles
Directions:
Melt honey, coconut oil and peanut butter in the microwave for 45 seconds. Stir in the cornflakes and Slim Mama Shake.
Add mixture into a lined tray.
Top with sprinkles and set in the fridge.
Cut into pieces.
Serves: 8

BISCOFF PROTEIN BALLS
Ingredients:
2 scoops Slim Mama Shake (choc or vanilla)
½ cup Biscoff spread
4 Biscoff biscuits
¼ cup coconut flour
1 tbsp honey
½ tsp cinnamon
1 tsp vanilla extract
6-8 tbsp milk of choice (we chose unsweetened almond milk)
Directions:
Add biscuits to food processor. Pulse until broken up finely. Add Slim Mama Shake, coconut flour, cinnamon and process until combined.
Add biscoff spread, honey, vanilla extract and a few tbsp of milk. Process again until a thick dough forms. If crumbly, add more milk. It should be like a thick, cookie dough-like consistency.
Roll into 12 round balls. Place in fridge to set.
Serves: 12

CARROT CAKE COOKIES
Ingredients:
1/2 cup rolled oats
2 tbsp coconut flour
1 scoop Slim Mama Shake (vanilla)
3/4 tsp baking powder
3/4 tsp cinnamon
Pinch of sea salt
1 tbsp coconut oil, melted
1 egg
1 tsp vanilla extract
1/4 cup maple syrup
1/2 cup carrot, cup grated
Directions:
Preheat oven to 180°C. Mix together oats, coconut flour, Slim Mama Shake, baking powder, cinnamon and salt in a medium bowl. In a separate smaller bowl, mix together oil, egg, vanilla, maple syrup, & carrot. Pour wet mixture into the dry and stir until well combined. Set batter in the fridge to chill for 20 mins. Scoop dough onto a lined baking sheet to make 10 cookies, and gently press down to flatten. Cook for 12- 15 minutes.
