PUMPKIN AND SALMON SALAD
1/2 cup pumpkin, cut into cubes
1 can salmon in water
Mixed bag of salad
1 tbsp light mayonnaise
Place pumpkin in a steamer and cook until slightly tender. If you don’t have a steamer place pumpkin cubes into a microwave-safe bowl and place glad wrap over the top. Microwave for 2- 3 minutes or until pumpkin is slightly tender.
Spray a tray with olive oil, place pumpkin on tray and season with salt.
Place under the grill until pumpkin is crispy to your liking.
While that’s cooking place salad and salmon in a bowl, and dress with light mayo.
Once pumpkin cooked mix through the salad and enjoy!
