PEANUT BUTTER & JELLY BARS
1 can chickpeas, rinsed and drained
1/4 cup creamy peanut butter
1/2 scoop Slim Mama Shake (choc or vanilla)
1/3 cup maple syrup
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp granulated stevia (optional)
Chia jam ingredients:
2/3 cup frozen strawberries
1 tsp chia seeds
1 tsp maple syrup
Preheat oven to 180°C. First make the jam. In a saucepan, heat strawberries for about 5 minutes until soft. Stir in chia seeds and maple syrup. Transfer to a bowl and refrigerate at least 30 minutes to thicken.
While that sets, in a food processor, blend all bar ingredients together until smooth. Spray a loaf pan with nonstick spray. Pour batter in and wet your fingers with water to press dough into an even layer. Spread chia jam on top. Bake at 180°C for 25-30 minutes. Cool in pan on wire rack. Cut into squares. Store in fridge.
