PEANUT BUTTER + BANANA OAT MUFFINS

Ingredients:
2 ripe bananas, mashed
4 tbsp coconut oil, melted
1/4 cup plain low fat greek yogurt
1/2 cup peanut butter
1 egg
1 tsp vanilla extract
2 tbsp brown sugar (or sweetener of choice)
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup wholemeal flour
1 scoop Slim Mama Shake (choc or vanilla)
3/4 cup rolled oats
1/4 cup dark chocolate chips

Directions:
Preheat oven to 180°C.
Line a muffin tin with baking paper or spray with olive oil.
Combine bananas, coconut oil, yogurt, peanut butter, egg, vanilla and brown sugar in a large bowl and mix well.
Add dry ingredients and stir until just combined.
Stir in chocolate chips.
Scoop into lined or sprayed muffin tin and bake for 25-30 minutes or until toothpick inserted into centre comes out clean.
Store in the fridge in an airtight container for up to 5 days or freeze for up to 3 months.
When ready to eat thaw in the fridge or microwave and enjoy!
