LAMINGTON INSPIRED BITES


Ingredients:
170g low-fat greek yoghurt (we used Chobani)
2 tsp cocoa powder
2 tsp granulated stevia
1.5 tbsp coconut oil, melted
1 tbsp honey
1 tbsp desiccated coconut
40g dark chocolate chips

Directions:
Mix yoghurt, cocoa, stevia, melted coconut oil and honey in a bowl until combined. Sprinkle the desiccated coconut into the bottom of ten of the silicon mini muffin tray holes. Spoon mixture on top, then freeze for 2 hours until frozen solid. Once frozen, melt chocolate in a small microwave safe container.
Drizzle melted chocolate on top of the bites. Once they’re all done, place back into the freezer until ready to eat.
