CHERRY RIPE SLICE
3/4 cup pitted cherries drained (fresh or canned)
1/2 cup shredded coconut
2 tbsp chia seeds
2 tbsp coconut oil, melted
1 tbsp granulated stevia
1/2 scoop SLIM MAMA SHAKE (either flavour)
60g baking dark chocolate chips
1-2 tbsp desiccated coconut
Line a loaf pan with baking paper. Place all ingredients except the chocolate and desiccated coconut into a food processor and blend until well combined. Spoon mixture into lined loaf pan, smoothing it with a spoon and place it in fridge to set.
Once set place dark chocolate chips in a microwave safe bowl and microwave until the chocolate is melted but be careful not to overcook (cook in 30 second intervals).
Once it is completely melted, pour the chocolate over the cherry mixture and using a spoon spread the chocolate over the slice, then sprinkle with desiccated coconut.
Return the pan to the fridge for at least 4 hours. When ready, place the slice onto the board and cut the slice with a hot knife into 10 equal pieces.
