CARROT CAKE COOKIES

Ingredients:
1/2 cup rolled oats
2 tbsp coconut flour
1 scoop Slim Mama Shake (vanilla)
3/4 tsp baking powder
3/4 tsp cinnamon
Pinch of sea salt
1 tbsp coconut oil, melted
1 egg
1 tsp vanilla extract
1/4 cup maple syrup
1/2 cup carrot, cup grated
Directions:
Preheat oven to 180°C. Mix together oats, coconut flour, Slim Mama Shake, baking powder, cinnamon and salt in a medium bowl. In a separate smaller bowl, mix together oil, egg, vanilla, maple syrup, & carrot. Pour wet mixture into the dry and stir until well combined. Set batter in the fridge to chill for 20 mins. Scoop dough onto a lined baking sheet to make 10 cookies, and gently press down to flatten. Cook for 12- 15 minutes.
