APPLE & HONEY MUFFINS

Ingredients
1 small apple
1 egg
1/2 cup low-fat vanilla yoghurt
3 tbsp honey
1/2 scoop vanilla SLIM MAMA SHAKE
1 tsp vanilla extract
1/2 tsp cinnamon
2 tsp baking powder
1.5 cups rolled oats
1/2 cup milk of choice (we chose unsweetened almond milk)

Directions
Preheat oven to 180˚C. Spray muffin tin with olive oil to avoid muffins sticking. Grate apple and set aside. Then using your hands squeeze out excess liquid. Combine egg, yoghurt, SLIM MAMA SHAKE, honey, vanilla, cinnamon and baking powder and mix. Add oats and apple and mix well. Add milk and mix until all mixed through. Spoon mixture into muffin tin and cook in the oven for 20-25 minutes or until cooked through. Cool on a wire rack.
