2 ripe bananas
1 ¼ cups desiccated coconut
100g dark baking chocolate

Preheat oven to 180˚C.
Peel and mash the very ripe bananas.
Mix in the coconut with the mashed bananas.
Spoon a heaped tablespoon of the mixture on line baking tray, and slightly flatten.
Continue with the rest of the mixture.
Bake for about 15 minutes until they start to go golden.
Leave to cool while melting the chocolate.
Place dark chocolate in a microwave safe bowl and microwave until the chocolate is melted but be careful not to overcook (cook in 30 second intervals). Dip cookies into the chocolate, or drizzle chocolate on top, then place on baking paper to cool.
