SWEET POTATO AND EGG BREKKIE BITES
Ingredients:
1/2 cup sweet potato
1 tsp olive oil
1/4 tsp garlic powder
4 eggs
Olive oil spray
Pinch of salt and pepper
Directions:
Preheat oven to 180˚C. Peel and grate sweet potato. Squeeze out any excess moisture. In a large bowl mix together sweet potato, olive oil and garlic powder. Spray muffin tin with olive oil spray to prevent sticking. Evenly spoon sweet potato mixture in the base of 4 muffin moulds, pressing mixture in firmly and evenly. Place in the oven to cook for 10 minutes. Remove from oven and crack one egg into muffin moulds on top of sweet potato base mixture. Season with salt and pepper and bake for 13-15 minutes or until egg is cooked.
