NO MAYO TUNA AVOCADO SLAW

Ingredients:
2 ripe avocados
8 cups fresh coleslaw salad mix
495g can Tuna in spring water
2 garlic cloves, minced
2 tbsp white vinegar
1/4 cup full fat coconut milk
1 tbsp dijon mustard
Salt and Pepper to taste
Directions:
Place the avocado in food processor with the garlic, mustard, salt and pepper.
Pulse until mashed up.
Add the vinegar and coconut milk a little at a time, pulsing until smooth.
In a large mixing bowl, combine the fresh coleslaw with avocado mixture.
Stir to coat then add tuna and combine well.
Serve immediately.
