200g Spud Lite potato (carisma potato)*
2 tbsp Woolworths Pizza Sauce (Garlic & Basil)
1/4 cup mozzarella cheese, shredded
50g leg ham, diced
1/2 cup pineapple chunks in juice
Salt and pepper
Extra virgin olive oil spray
Preheat the oven to 180˚C. Line a baking tray with baking paper.
Using a mandolin, slice the potato into thin slices (or use a sharp knife, but be careful!). 
Dab sliced potato slices with paper towel to absorb any water (the potatoes are very watery). 
Spray with olive oil spray and season with salt and pepper.
Spread the potato slices out on the baking tray and place in the oven for 25-30 minutes.
Once the potatoes are crispy remove from the oven and using a small, round baking tin, lined with baking paper, spread the potato slices out.
Spread the sauce on the potato slices using the back of a spoon then sprinkle over ham, pineapple and cheese.
Place back in the oven for 20-25 minutes until the cheese melted.
