LOADED TACO FRIES

Ingredients:
200g Spudlite potatoes
100g lean beef mince
1 tsp taco seasoning
2 slices light cheese
Splash unsweetened almond milk
1/2 tsp light sour cream
1/2 tomato, diced
1/2 tbsp avocado
1 cup lettuce, diced
1/2 tsp cumin
Salt to taste
Extra virgin olive oil spray
Directions:
Preheat the oven to 180°C.
Slice potatoes into chips and place them in a bowl to season with cumin and salt.
Roast them in the oven for 25-30 minutes.
Lightly coat a frying pan with olive oil spray and over medium heat cook beef mince.
Once the mince is brown, sprinkle over the taco seasoning and continue to cook for 2 mins. Set aside.
To make the cheese sauce, in the frying pan over low-medium heat, place two slices of cheese and a splash of almond milk and stir until cheese melts and sauce thickens.
Once potatoes are cooked, in a bowl layer potatoes, beef, cheese sauce, tomato, avocado, lettuce and sour cream.
