BACON + SWEET POTATO QUICHE


Ingredients:
6 eggs
1 large sweet potato
8 slices short cut bacon
1 cup fresh spinach
1/2 cup light coconut milk
1/2 tsp dried oregano
1 tsp olive oil
Salt and pepper to taste
Olive oil Spray

Directions:
Preheat oven to 180˚C.
Prepare a pie dish or tart pan by spraying it with olive oil then set aside.
Heat 1 tsp olive oil over med to high heat and cook bacon until lightly crispy.
Chop the cooked bacon into small pieces.
Peel and cut the sweet potato into 1/4 inch disks.
In a medium bowl, whisk together eggs, coconut milk and seasonings.
Line the bottom of the prepared dish with sweet potato and bacon.
Layer the spinach over the sweet potato and bacon.
Place another layer of sweet potato over spinach followed by the remaining pieces of bacon.
Evenly pour egg mixture over the top.
Bake for 35-40 minutes. Serve.
