AIR FRYER MINI MEXICAN COB LOAF

Ingredients:
4 x Coles High Fibre Low Gi White Bread Rolls
Filling:
200g lean beef mince
1 tbsp Coles Mexican Spice mix
125g tin black beans
50g light grated mozzarella cheese
Topping:
4 tsp Coles Mexican Sauce
1 tomato
1 red onion
4 tsp light sour cream
Extra virgin olive oil spray
Directions:
To prepare your cobs, start by slicing the lid off carefully. Once removed, pull out the filling of the cob so that there is plenty of room inside to add the filling. Set aside.
To make the salsa, cut the tomato and onion into small chunks and combine in a bowl with salt. Set aside.
Place cobs and bread into the air fryer at 180˚C for 5-10 minutes (or until crunchy) while you prepare the filling.
Spray a pan with extra virgin olive oil spray and place on medium heat.
Cook the beef until it has browned.
Add the Mexican spice mix and the tin of drained and rinsed beans.
Stir gently for 5 minutes or until the beans are warm.
Sprinkle the cheese into the beef mixture until the cheese has melted through.
Be sure you check on the cobs while doing this step!
Spoon the mince mixture into the cobs.
Add the salsa, Mexican sauce and sour cream to the top.
