4 slices of wholemeal toast
1/4 cup unsweetened almond milk
1/2 tsp vanilla essence
1/2 tsp cinnamon
1 tbsp granulated stevia
Pinch of salt
Fresh fruit (optional)
Preheat frying pan to medium/high heat.
Mix together eggs, almond milk, vanilla essence, stevia, cinnamon and salt in a medium sized bowl.Lightly spray the pan with extra virgin olive oil.
Dip each slice of bread into the egg mixture and then place each piece in the pan.
Cook for 2-3 minutes each side or until cooked through.Remove and serve with optional topping such as fresh fruit or sugar free maple syrup!
